{this recipe called for mahi mahi but in it’s absence halibut is just fine, maybe better, pardon me as the juices dribble down my chin! the curry is mild and along with the coconut, enhances the natural sweet flavors of the delicate fish so nice!}

First, I have to admit I love watching Top Chef. The snooty judges and enormous egos of the cheftestants. Such the unseemly combination, I just abhor to adore it!

Their host Padma, on the other hand is one cast member I genuinely like, offering up her big toe to be deep fried last week was a selfless act I can only admire. Especially during the chaos of the Judges Table…

Pork Encrusted in Asian Vegetable Chips with Pineapple & Crystallized Ginger Salsa


{crispy vegetable chips are ever so slighly sweet, tender pork, and gingery pineapple are a match made in heavan}

This first recipe was adapted from Bon Apetite’s recipe for panko pork with pineapple salsa. It’s a delicious concept but I had change it a little as soon as I heard the crystallized ginger and asian vegetable chips cat-calling me from the market’s asian food district. I went ahead and bought two bags of chips, one to snack upon, and the other the pulverize with love.

{this not too sweet crisp relies on the natural sugar of the nectarines whose concentrated flavor is so perfect with vanilla ice cream, we ate this all week until it was gone, yum!}

If it’s before 7:00AM, I cannot be held responsible for my behavior. My speech is choppy, I’m unable to form complete sentences or even stand upright, yet my senses all have a penetrating awareness of my surroundings.

I might look totally checked out, but trust me, I am dialed in. I can hear a pin drop and both my sense of smell and hairstyles are heightened like a werewolf’s might be under the glow of a full moon.

{mild flavors of the fennel and cauliflower blend together so nicely with creamy bechamel, crisp panko, and sweet earthy mushrooms}

I recently figured out how to use my Super Benriner Mandoline and since have been mandolining poor unsuspecting vegetables into their everlovin’ afterlife. I’ve placed a warning note in the crisper but it turns out vegetatables are not very smart, and neither am I for writing letters to my produce. Latest victims: cauliflower and fennel, RIP sweet ones, mama loves you…
