1 lg or 2 sm grouper Filet
4 cloves of garlic, pressed or chipped fine*
2 tb fresh ginger, chopped extremely fine**
1/2 lemon, juiced
1/4 c extra virgin olive oil
In a large bowl mix the juice of the lemon, olive oil, ginger, and garlic. Salt and pepper both sides of the fish and add to the marinade. Let sit for a 1/2 hour, turning after 15 minutes.
In the meantime, heat up the grill to about 300 degrees. Put the fish on the grill, close the lid and leave it alone untill its cooked halfway through. Flip the fish only once and use the rest of the marinade for basting. The filet I cooked was on the thick side and took 10 minutes for each side; cooking times will vary based on the thickness of the filet.
This can also be roasted in a 400 degree oven, also basting halfway through.
Serve with Avocado Mango Salsa over the top.
* Adjust the recipe for 2 cloves of garlic per piece of fish that your cooking.
**Ginger should be one tb per piece.
