Mix the following together in a large bowl:
a few generous handfuls of thinly sliced scallions
grate some ginger, about two spoonfuls
grapeseed or other neutral oil, a few swirls
light soy sauce, a few swirls
sherry vinegar, a couple shakes
kosher salt to taste
While the sauce is marinating boil some ramen after throwing away the those untoward flavor packets. Make 2 packs because 1 never seems to be enough, remove them from the water into your bowl and mix in the sauce.
We ate this with just some sweet chili sauce on top. But it would be so good with all manner of veggies, egg, and sliced beef, pork, or chicken. Yakitori, Korean barbecue, and hoisin sauce would be delicious too. Really anything you like on top; these noodles are a great base for however fancy you want to get. And you do want to be fancy, don't you?
