caramelized onions - step 1 - 2012-03-26 03:22:02
I hade an over abundance of onions so I wanted to caramelize them now and figure out what to do with them later. It's as easy as it gets to do and the result is so delicious you can use them in all sorts of delicious ways.
What you need:
yellow onions, however many you want to use
olive oil
salt
non-stick pan and a lid
Cut them in half and then slice on the thin side. Over medium high heat add a swirl or two of olive oil to the pan along with the onions. Cover for 5-10 minute to start them cooking and keep and eye on it so they don't burn. Uncover and you will see they are nice an wilted. Add a pinch or two of salt depending on how much you are cooking. Be conservative with the salt, these have a ton of natural flavor and you don't want to over salt.
Set the heat to medium low and let it cook stirring regularly until a deep golden color is achieved the the onions have reduced in size dramatically. This took me almost an hour.
